Chai Tea Marshmallows

We show up to parties with homemade marshmallows pretty often and generally get one of these two responses:

“I didn’t even know people could make marshmallows!”

or, my favorite..

“These taste just like marshmallows!”

If you want to seriously impress your friends and family with a recipe that’s way easier that you’d think, these Chai Tea marshmallows are the way to go. They’re light, airy, and melt beautifully into a cup of coffee or cocoa.

Ingredients:

3 packages unflavored gelatin – I highly recommend Knox Gelatin

1 cup brewed chai tea cooled to room temp them poured over ice, divided

Cinnamon

Ground Ginger

12 ounces granulated sugar (approximately 1 1/2 cups)

1 cup light corn syrup

1/4 teaspoon salt

1 teaspoon vanilla extract – You want to go with a quality vanilla like Watkins Vanilla

1/4 cup confectioners’ sugar

1/4 cup cornstarch

Nonstick spray

Chai Tea Bag

Oregon Chai Latte Mix

Tools:

Metal Bowls

Anchor Measuring Cups

Candy Thermometer

Kitchenaid Mixer

Pizza Cutter or Cookie Cutters like these

 

First things first, combine 1/2 cup of your cold chai tea to with the gelatin in your mixer with the whisk attachment. Do not start whisking this yet.

Next, combine the rest of the cold chai, sugar, salt, spices, and light corn syrup into a saucepan. Crank the heat to high, cover the pan, and let this mixture cook for 3-4 minutes. After that uncover, carefully clip your candy thermometer to the side of the sauce pan, and continue cooking for 7-8 minutes until the temperature reaches 240 degrees F. This step is easy but it’s important to be precise!

Once your sugar mixture is up to temp, turn your mixer on low with the whisk attachment to blend the gelatin and water. Slowly and carefully pour in your sugar syrup. Continue whisking for 12-15 minutes until the mixture starts to look like marshmallow fluff. Add your quality vanilla in the last minute or so of mixing. This is the exciting part!

After you have your fluff mixture, prep a baking pan by spraying a little bit of non-stick spray and then thinly coating it with a mixture of powdered sugar and corn starch. Take a spatula and pour your mixture into the pan, spreading it evenly. Then comes more chai tea flavor! Mix your Oregon Chai Tea mix with powdered sugar and sprinkle it on top.

Let the Mixture sit for at least 4 hours. If your kitchen is warm, pop them in the fridge while they set. Then they just need cut and you can enjoy them! You can use cookie cutters if you want to get fancy, but we just spray a pizza cutter with the tiniest bit of nonstick spray and go to town.

Then all that’s left is to take a moody photo like all the cool Instagram food photographers are doing!
